Preheat large pan on med heat. Lightly coat with coconut oil to prevent sticking.
In separate bowls, mix the dry and wet ingredients. Stir the wet into the dry until combined.
Pour 2 Tbsp. of batter into pan and cook.
Repeat with remaining batter. Top with crushed nuts and maple syrup of choice.
