  • 1 oz. cashews, raw
  • Water, for soaking the cashews
  • 1/2 cup almond milk, vanilla, unsweetened, light
  • Pinch of salt
  • 1 Tbsp. honey
  • 1 tsp. vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1 cup blackberries
  • Optional Toppings
  • Chopped toasted cashews
  • 1 tsp. chia seeds
  • Directions

    Soak the cashews in cool water for at least three hours in a covered bowl. Reserving some of the soaking liquid, drain cashews, then add nuts and water to a high-speed blender or food processor. Puree until smooth. Drizzle in almond milk. Continue to blend, while adding the salt, honey, SweetLeaf Stevia Sweetener, and vanilla extract to the mixture.

    Taste mixture and adjust sweetness as needed. Continue blending until a smooth, creamy texture has been achieved. If needed, drizzle in additional almond milk. Refrigerate for a few hours to allow the flavors to marry and for the sauce to thicken.

    Place berries in small dessert dishes. Spoon out a tablespoon of cashew cream over the berries. Dole out the remaining cream evenly until you finish off the sauce. Garnish with chopped toasted cashews and chia seeds, if desired.
