Ingredients

  • Store-Bought Honey Cornbread Mix
  • 2 Eggs
  • 2/3 Cup Sour Cream
  • 1 TBSP SweetLeaf® Granular Monk Fruit Sweetener
  • 1/2 Cup Almond Milk
  • 3 Ears Fresh Corn
  • Directions

    Preheat your oven to 375 degrees F.

    Remove corn kernels from the cob.

    Mix eggs, sour cream, and almond milk together and add cornbread dry packet. Stir together.

    Add corn kernels and mix thoroughly.

    Add to a cast-iron skillet and bake for 23-38 minutes depending on your oven.

    Top with butter and enjoy!
