Cilantro Lime Coconut Rice

Ingredients

2 tbsp Granular Monk Fruit Sweetener Bag, 240 grams

1 can (15 oz) coconut milk

1 lime, juiced

1 pinch salt

½ cup water

1 pinch shredded coconut, toasted for topping

Directions

Mix everything into the Instapot and set pressure cook on high for 3 minutes. When it’s done, leave the lid on for 7 minutes and leave the nozzle closed so it can finish steaming. Once 7 minutes has passed, open the lid and add chopped cilantro, stir. Top with shredded coconut. Serve immediately! Enjoy!
