Cheesecake Stuffed Apples

These better-for-you Cheesecake Stuffed Apples bring all the best flavors of fall into a dessert with zero sugar. 

Let's make it:
Cheesecake Filling
-8 oz cream cheese softened
-1/3 cup plain full fat greek yogurt
-1/4 cup SweetLeaf Monk Fruit
-1 tsp vanilla extract

Crumble
-1/2 cup graham cracker crumbs 
-2 tbsp melted butter

Caramel
-1/3 cup cashew butter
-1 tbsp melted coconut oil
-1 heaping tbsp collagen peptides 
-1 full dropped of English Toffee Sweet Drops

Instructions
1. Preheat the over to 350
2. Slice the tops off of your apples off
3. Use a knife to slice a circular line around the inside of the apple, then use a spoon to dig out the centre
4. Making filling by whipping cream cheese until smooth, then adding remaining ingredients and whip until completely smooth
5. Melt butter and add to processed graham crackers, then spread overtop apples
6. Bake at 350 for 25 minutes
7. Make caramel by whisking ingredients together on low heat in a sauce pan until smooth and runny. If your cashew butter was on the thicker side feel free to add more melted coconut oil.
8. Drizzle overtop apples and enjoy!
