These better-for-you Cheesecake Stuffed Apples bring all the best flavors of fall into a dessert with zero sugar. Let's make it:
Ingredients
Cheesecake Filling
- 8 oz cream cheese softened
- 1/3 cup plain full fat greek yogurt
- 1/4 cup SweetLeaf Monk Fruit
- 1 tsp vanilla extract
Crumble
- 1/2 cup graham cracker crumbs
- 2 tbsp melted butter
Caramel
- 1/3 cup cashew butter
- 1 tbsp melted coconut oil
- 1 heaping tbsp collagen peptides
- 1 full dropped of English Toffee Sweet Drops
Directions
- Preheat the over to 350
- Slice the tops off of your apples off.
- Use a knife to slice a circular line around the inside of the apple, then use a spoon to dig out the centre
- Making filling by whipping cream cheese until smooth, then adding remaining ingredients and whip until completely smooth
- Melt butter and add to processed graham crackers, then spread overtop apples
- Bake at 350 for 25 minutes
- Make caramel by whisking ingredients together on low heat in a sauce pan until smooth and runny. If your cashew butter was on the thicker side feel free to add more melted coconut oil.
- Drizzle overtop apples and enjoy!
