Sugar-Free Vanilla Bean Pudding

Ingredients

1/4 cup arrowroot powder*
1/4 tsp. salt
2 cups almond milk, unsweetened
1 cup half-and-half
4 egg yolks, slightly beaten
1 Tbsp. butter, softened
1/2 vanilla bean or 1/2 tsp. vanilla extract
Chocolate shavings, sugar-free

Directions

Stir arrowroot powder and salt together in a sauce pan. On medium heat, whisk in almond milk, half-and-half, and egg yolks. Continue to cook, stirring constantly until mixture thickens and comes to a boil. Boil 1 minute and remove from heat.

Stir in butter, vanilla bean or extract, and SweetLeaf® Liquid Stevia Vanilla Crème Sweet Drops®. Allow to cool slightly before tasting, then adjust Sweet Drops®, if needed. Cover mixture with plastic wrap directly on top of pudding to avoid formation of a skin. Cool to room temperature and chill before serving. Top with sugar-free chocolate shavings if desired. Each serving is about 1/2 cup.
