Ingredients

INGREDIENTS FOR THE CAKE
2 cups almond flour
1/4 cup coconut flour
1/2 tsp baking soda
1/4 tsp salt
1/2cup unsalted butter, softened
4 large eggs, room temperature
1/2cup unsweetened almond milk
1tsp vanilla extract
INGREDIENTS FOR THE FROSTING
8oz cream cheese, softened
1/2 cup unsalted butter, softened
2 tsp vanilla extract

Directions

    1. Preheat the oven to 350°F and grease two round cake pans. 
    2. In a large mixing bowl, whisk together the almond flour, coconut flour, baking soda, and salt. 
    3. In a separate bowl, cream together the softened butter and SweetLeaf French Vanilla Monk Fruit Sweet Drops until light and fluffy.
    4. Beat in the eggs, one at a time, then add the almond milk and vanilla extract. 
    5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. 
    6. Divide the batter between the two prepared cake pans and smooth out the tops with a spatula. 
    7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. 
    8. Allow the cakes to cool in the pans for 10 minutes before removing them from the pans and allowing them to cool completely on wire racks. 

    To Make The Frosting:

        1. In a large mixing bowl, beat together the softened cream cheese and butter until creamy and smooth. 
        2. Add the SweetLeaf French Vanilla Monk Fruit Sweet Drops and vanilla extract, and beat until well combined. 
        3. Place one of the cooled cake layers on a cake plate or platter, and spread a layer of frosting over the top. 
        4. Place the second cake layer on top, and spread a layer of frosting over the top and sides of the cake. 
        5. Decorate the cake with sugar-free jelly beans or other candy, and sprinkle with sugar-free coconut flakes to create a bunny design. 

        To Build Your Bunny Cake:

        1. While the cake is cooling make the ears and bow tie using this easy bunny template, the sides become the ears and the middle is the bow tie.
        2. Place one of the cooled cake layers on a cake plate or platter, and spread a layer of frosting over the top. 
        3. Please the bowtie below the cooled cake layer and the bunny ears at the top and spread a layer of frosting over the top.
        4. Decorate the cake with sugar-free jelly beans or other candy, and sprinkle with sugar-free coconut flakes to create a bunny design.
