INGREDIENTS FOR THE CAKE
2 Cups Almond Flour
1/4 Cup Coconut Flour
1/2 Tsp Baking Soda
1/4 Tsp Salt
1/2cup Unsalted Butter, Softened
3/4 cup French Vanilla Liquid Monk Fruit, 2 Oz
4 Large Eggs, Room Temperature
1/2cup Unsweetened Almond Milk
1tsp Vanilla Extract
INGREDIENTS FOR THE FROSTING
8oz Cream Cheese, Softened
1/2 Cup Unsalted Butter, Softened
1/2 cup French Vanilla Liquid Monk Fruit, 2 Oz
2 Tsp Vanilla Extract
Directions
- Preheat the oven to 350°F and grease two round cake pans.
- In a large mixing bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
- In a separate bowl, cream together the softened butter and SweetLeaf French Vanilla Monk Fruit Sweet Drops until light and fluffy.
- Beat in the eggs, one at a time, then add the almond milk and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter between the two prepared cake pans and smooth out the tops with a spatula.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before removing them from the pans and allowing them to cool completely on wire racks.
To Make The Frosting:
- In a large mixing bowl, beat together the softened cream cheese and butter until creamy and smooth.
- Add the SweetLeaf French Vanilla Monk Fruit Sweet Drops and vanilla extract, and beat until well combined.
- Place one of the cooled cake layers on a cake plate or platter, and spread a layer of frosting over the top.
- Place the second cake layer on top, and spread a layer of frosting over the top and sides of the cake.
- Decorate the cake with sugar-free jelly beans or other candy, and sprinkle with sugar-free coconut flakes to create a bunny design.
To Build Your Bunny Cake:
- While the cake is cooling make the ears and bow tie using this easy bunny template, the sides become the ears and the middle is the bow tie.
- Place one of the cooled cake layers on a cake plate or platter, and spread a layer of frosting over the top.
- Please the bowtie below the cooled cake layer and the bunny ears at the top and spread a layer of frosting over the top.
- Decorate the cake with sugar-free jelly beans or other candy, and sprinkle with sugar-free coconut flakes to create a bunny design.
