    Shrimp Marinade

In a mixing bowl, combine all ingredients and mix to combine, making sure that the shrimp are evenly coated.

    Roasted Cashew Topping

Heat the olive oil in a small skillet over medium heat. Add the cashews and mustard seeds and cook, stirring frequently, until the nuts and seeds are fragrant and lightly browned. Immediately transfer mixture to a small bowl and serve on top of the coconut curry shrimp.

Heat the olive oil in a large skillet on medium-low heat. Add the minced garlic and diced onion and cook until soft and translucent, stirring often. Add the curry powder, salt, and pepper and mix to thoroughly combine.

Add the almond coconut milk, basil, lime juice and zest, Sweet Drops®, and cauliflower florets and mix to combine. Bring the mixture to a boil over medium high heat. Cover and reduce the heat to simmer until the cauliflower is tender, about 10-12 minutes.

Add the marinated shrimp and continue to simmer for 3 minutes. Turn off the heat and gently fold in the spinach leaves. Serve with brown rice and top with the roasted cashew mixture.
