• 1 1/2 cup jasmine rice
  • 2 tablespoons SweetLeaf® Powdered Monk Fruit Sweetener
  • 1 can of coconut milk (15oz)
  • Juice from 1 lime
  • Pinch of Salt
  • 1/2 cup water
  • Pinch of toasted shredded coconut for topping
  • Directions

    Mix everything into the Instapot and set pressure cook on high for 3 minutes. When it’s done, leave the lid on for 7 minutes and leave the nozzle closed so it can finish steaming. Once 7 minutes has passed, open the lid and add chopped cilantro, stir. Top with shredded coconut. Serve immediately! Enjoy!
