Frozen Coconut Daiquiri Slushie

Make this Coconut Slushie with or without alcohol, but either way, it’s the perfect beverage for a party.

1 tsp. SweetLeaf® Liquid Stevia Coconut Sweet Drops®
1 can (13.5 oz.) coconut milk, whole or divided (divided – 3/4 cup “solid cream part” and 1/2 cup coconut water)
3 cups ice

1 tsp. rum extract or 4 oz. of white rum

If using white rum as opposed to rum extract, you can eliminate the coconut water.

Add all ingredients into a high-powered blender and blend until ice is crushed and mixture is slushie! Taste and adjust stevia, as needed.

This sugar-free delight will top everyone’s list of favorite homemade treats.

2 tsp. SweetLeaf® Liquid Stevia Cinnamon Sweet Drops®
2 13.5 oz. cans coconut milk
1 Tbsp. medium-chain triglyceride (MCT) oil
2 tsp. ground cinnamon
1 tsp. vanilla extract
Pinch of salt
1 Tbsp. grass-fed beef gelatin powder (do not use collagen peptides)
3 Tbsp. water divided (1 Tbsp. room temperature, 2 Tbsp. boiling)

Place the SweetLeaf® Liquid Stevia Cinnamon Sweet Drops®, coconut milk, MCT oil, cinnamon, vanilla extract and salt in a high-powered blender and blend until smooth. Set aside.

In a small bowl, place the gelatin and stir in 1 Tbsp. water at room temperature. Add 2 Tbsp. boiling water and stir into gelatin until dissolved, leaving no clumps.

Pour the liquid gelatin into the blender and blend on high until combined well. Pour blender contents into an ice cream machine and follow manufacturer’s instructions.

Place ice cream into a covered loaf pan or airtight container. Freeze for 1-2 hours. (If frozen overnight, set out to soften before serving.) Enjoy!

With only 126 calories per decadent popsicle, this is a frozen treat you can enjoy all year.

12 drops SweetLeaf® Liquid Stevia Chocolate Sweet Drops®
12 drops SweetLeaf® Liquid Stevia Caramel Sweet Drops®
1 1/2 cup half and half
2 Tbsp. cocoa powder, unsweetened
1/3 cup water, hot
1 tsp. instant coffee
1 tsp. guar gum

Raw cocoa nibs

Pour cream into a large bowl. Add in cocoa powder, Chocolate Sweet Drops®, and Caramel Sweet Drops®. Mix with a whisk until blended.

Dissolve instant coffee and guar gum into the hot water and stir briskly with a fork to prevent guar gum from clumping. Pour instant coffee mixture into a bowl with cream, cocoa and Sweet Drops® mixture. Mix with whisk and pour into popsicle molds. Freeze overnight or 6-8 hours.

In a saucepan on low heat, add in chocolate chips and coconut oil. Heat on low until chocolate is melted and runs off the spoon easily. Add in Caramel Sweet Drops®. Remove from heat and leave to cool for 3 minutes, while prepping popsicles.

Take popsicles out of the freezer and run under warm water until they come out of molds. Place on parchment paper and drizzle chocolate over popsicles. Sprinkle with raw cocoa nibs, if desired.

To store popsicles, place them in zip-top bag and put them back in the freezer.

Sugar-Free Orange Creamsicle Ice Cream

Recipe and photo courtesy of Sugar-Free Mom.

Enjoy the summertime taste of citrus with a sugar-free ice cream treat!

2 tsp. SweetLeaf® Liquid Stevia Valencia Orange Sweet Drops®
1 cup heavy whipping cream
2 cups half and half (or light cream)
4 egg yolks
Zest of 1 orange
1 tsp. vanilla extract
1/2 tsp. orange extract
Few drops of natural orange food coloring

In a saucepan over medium heat, bring the heavy cream and half and half to a simmer, stir and remove from heat. In a bowl, whisk the egg yolks until light in color. Temper cream mixture into eggs by gradually adding small amounts of cream to eggs until all is incorporated. Bring mixture back to stove top and heat on low, stirring frequently until mixture thickens slightly and coats the back of a spoon ( 170-175° F). Pour this mixture into a container and allow it to sit at room temperature for 30 minutes. Stir in the rest of the remaining ingredients. Taste and adjust stevia if needed. Cover and refrigerate for 2-3 hours.

Pour mixture into an ice cream machine and follow your manufacturer’s instructions. Should be the consistency of soft serve within 20 minutes. You can enjoy as soft serve, or freeze and let harden.

Double Chocolate Peanut Butter Popsicles

Recipe and photo courtesy of Sugar-Free Mom.

The perfect, sweet and salty flavor duo, now in popsicle form!

1 tsp. SweetLeaf® Liquid Stevia Chocolate Sweet Drops®
1 cup heavy whipping cream
1-1/2 cup almond milk, unsweetened
1/2 cup peanut butter, no sugar added
1/4 cup cocoa powder, unsweetened

Chocolate for coating

Mix by hand or use a blender to blend all the ingredients together, except the optional chocolate coating. Blend just for a few seconds to combine the ingredients. If you blend too long the mixture will become like whipped cream due to the heavy cream in the recipe. Taste and adjust stevia as needed.

Pour into popsicle molds and freeze for 2-3 hours or until hardened. Once hardened, remove by holding the mold under warm running water to better facilitate release from molds.

Place popsicles onto a parchment-lined baking sheet. Drizzle the chocolate coating or pour and spread coating with a spoon over both sides of the popsicle if desired. Place back on the baking sheet to freeze again for about 10 minutes or overnight.
