Six Sweet Spring Recipes from SweetLeaf Stevia® Sweetener (Part 3 in a 3-Part Series)

Strawberry Soup*

1 pint of strawberries

15 packets of SweetLeaf Stevia®

1 Tablespoon lemon juice

1 Tablespoon corn starch

4 oz. water

Combine strawberries, stevia and lemon juice. Mix the corn starch and water together and add to the first mix. Bring to a boil, strain, and chill.

Mango-Melon Salsa

1 cup diced melon(s) of choice

1 cup fresh mango, peeled and diced

½ serrano (or milder) chili, seeded and minced

1 teaspoon fresh mint, shredded

1 Tablespoon lime juice

½ cup diced pineapple

1 teaspoon ground ginger

1 Tablespoon fresh cilantro, chopped

3 drops Lemon Drop SweetLeaf® Liquid Stevia

½ teaspoon salt

Chili powder to taste

Combine all ingredients in bowl and gently toss to combine. Refrigerate before serving.

Applesauce Cupcakes

1 cup all purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

2 teaspoons cinnamon

½ teaspoon ginger

½ cup soft butter

1 teapsoon (3 packets) SweetLeaf Stevia® Sweetener

3 eggs

1 Tablespoon vanilla extract

½ cup unsweetened applesauce

Chopped nuts if desired

Preheat oven to 330° F. In a small bowl, stir together flour, baking powder, baking soda, cinnamon, ginger and stevia. Set aside. In a large mixing bowl, beat butter with an electric mixer on high speed for approximately 1 minute. Add eggs and vanilla and blend on high speed for 30 seconds. Alternate adding flour mixture and applesauce and beat on low speed until mixed. Pour into muffin tins sprayed with nonstick baking spray. Bake 6-8 minutes. Makes 24 mini cupcakes.

Frosting

1 Tablespoon vanilla

1 teaspoon orange zest

1 lb. butter

2 lb. cream cheese

1 teaspoon (3 packets) SweetLeaf Stevia® Sweetener

Mix all together until light and fluffy.

Strawberry-Yogurt Liquado

10 frozen strawberries

1 cup unsweetened yogurt

½ cup orange juice

1 packet SweetLeaf® (or to taste)

Combine all ingredients in a blender and whip until smooth. Sweeten to taste. You may wish to add an additional packet of SweetLeaf®. Serve immediately.

SweetLeaf® Home-Style Lemonade

6 lemons

12 packets SweetLeaf Stevia®

6 cups cold water

Juice the lemons to make 1 cup of juice. To make your labor easier, FIRMLY roll the lemons between your hand and countertop before cutting in half and juicing. In a gallon pitcher, combine 1 cup lemon juice, SweetLeaf Stevia® Sweetener and 6 cups cold water; stir. Adjust water and SweetLeaf Stevia® to taste. Chill and serve over ice.

Southern-Style Sweet Tea

Black tea

2 quarts water

10 packets SweetLeaf Stevia®

Bring two quarts water to a boil; remove from burner immediately. Add black tea and steep for 10 minutes. Remove tea and cool. Pour into glass pitcher and stir in 10 packets SweetLeaf Stevia® Sweetener. Stir until sweetener has dissolved. Let cool. Sweetened tea is more perishable than unsweetened – store it well-sealed in a glass (not plastic) container in the refrigerator.
